I’ve only made a few recipes that incorporate tea into the ingredients list, but I’m always on the lookout for something new to try. Metropolitan Tea (one of our fine tea suppliers) sent along these recipes that use Cream Earl Grey and they look really intriguing. I suppose there are many teas that would work for this type of thing, but I suspect that they are using Cream Earl Grey since it has a nice vanilla flavor.
Earl Grey Milk
1-½ cup milk
2 teaspoons Cream Earl Grey
Bring milk and tea almost to a boil in a small pot. Turn off heat and steep for 10 minutes. Strain out tea, then cool.
Earl Grey Syrup
½ cup granulated sugar
½ cup water
2 teaspoons Cream Earl Grey
Place sugar, water, and tea into a small pot. Bring to boil and simmer 2 minutes. Remove from heat and steep for 5 minutes, strain out tea, then cool.
Use these substitutions in cookies, cakes, oatmeal, scones and much more. If you give one of these a try, I’d love to know what you think.
